A Veganuary recipe, tried and tested by the Amazing Adatias from Leicester City.
What difference does it make?
Sometimes we lack inspiration to cook new things, and here is an occasion of scoring an additional goal completing the "Vegan Meal" activity. Smart.
What do you need?
- 500g sweet potatoes (peeled and chopped into bite-size pieces)
- 1 can chopped tomatoes
- 1 can kidney beans (drained and rinsed)
- 50g red lentils (rinsed)
- 350ml water
- 1 onion
- peeled diced
- 2 tbsp sunflower oil
- 1 red pepper (deseeded and diced)
- 2 cloves garlic (minced)
- 2 tsp chilli powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- alternative: use one pack of chilli spice mix instead of these spices
- Salt and pepper to taste
Step by step

Fry the onion gently in the oil for about 5-8 minutes until softening.

Add the red pepper, sweet potatoes and garlic, and cook for another minute or two, stirring.

Add the spices, coating the vegetables in them, then add the tomatoes, kidney beans and the water.
Season to taste. Bring to the boil.

When boiling, add the red lentils, cover, and reduce the heat. Allow it to simmer for 15 - 20 minutes, until the potatoes and lentils are cooked through, stirring every now and then, and adding a little more water if it starts to dry out.
Ready to serve! Don't forget to take a photo of the dish you've made and a team member licking their lips. If they're in your club kit, even better.
