What difference does it make?
Sometimes we lack inspiration to cook new things, and here is an occasion of scoring double points completing a meat-free meal. Smart.
What do you need?
- 500g potatoes (peeled and diced into 2.5cm cubes)
- 250g spinach leaves
- 2 tbsp vegetable oil
- 1 onion (peeled and diced)
- 2 cloves of garlic (peeled and minced)
- 1 tbsp fresh ginger (grated)
- 1 large red chilli (deseeded and finely chopped)
- ½ tsp ground cumin
- ½ tsp ground turmeric
- ½ tsp ground coriander
- Salt and pepper
Step by step

Fry the onions in the oil gently for 8-10 minutes until translucent.

Add the garlic, ginger and ground spices, and fry for another 2-3 minutes, stirring.

Add the potatoes, and stir until they are covered with the spices. Add 120ml of water, and cover. Let the potatoes steam for 7-10 minutes. Stir every so often, and add a little more water if it dries out.

When the potatoes are soft, stir in the spinach leaves, and cook them for three minutes until wilted. Season to taste.
