A Veganuary recipe: these bars are packed with healthy fibre, omega-3 fatty acids and protein and make a brillant snack option to boost energy and satisfy your sweet tooth.
What difference does it make?
Sometimes we lack inspiration to try new things, especially when it comes to breakfast routine: Veganuary is the occasion to try something yummy and exciting!
What do you need?
- 250g dried figs
- 10g desiccated coconut
- 30g sprouted oats
- 25g mixed seeds
- 2 tbsp ground flaxseed
- 100ml plant-based milk (preferably nuts)
- 1 tsp cinnamon
- ½ tsp ground ginger
- Pinch sea salt
Step by step
Preheat the oven to 180°C.
Soak the coconut, oats, seeds, spices and flax with the nut milk and set aside. Finely chop the figs and process into a paste.
Once the oats have soaked up the milk, briefly combine with the figs in the food processor.
Press the mixture into a lined baking tray and bake for 30 minutes until the edges are light golden brown and allow to cool for about 15 minutes before cutting into bars.
