A Veganuary recipe of dairy-free pancakesthat is sure to be the best meal of your day.
What difference does it make?
Sometimes we lack inspiration to try new things, especially when it comes to breakfast routine: Veganuary is the occasion to try something yummy and exciting!
What do you need?
- 200g self-raising flour
- 1 tsp baking powder
- 300ml plant-based milk (soya works well)
- 1 ripe banana
- 15g margarine (plant based butter spread)
- Optional: 150g pack blueberries and maple syrup
Step by step
Mix together the flour and baking powder in a large bowl. Make a well in the centre of the dry ingredients and whisk in the milk to make a thick smooth batter.
Beat in the mashed banana and melted margarine then, optional, gently stir in half the blueberries.
Heat a teaspoon of oil in a large non-stick frying pan. Drop a large tablespoonful of the batter per pancake into the pan to make pancakes about 7.5cm across. Make three or four pancakes at a time.
Cook for about 3 minutes over a medium heat, then turn over and cook for a further 2-3 minutes until golden.
Serve warm with, if you like, some maple syrup and the rest of the blueberries. Don't forget to take a picture of one of your team member enjoying his vegan breakfast!
